Along with our kale smoothies and avo-smashed everything, there’s another healthy trend we’re totally eating up: Say hello to sweet potato toast.

Taking inspiration from dietitian nutritionist and recipe creator powerhouse, McKel Hill of Nutrition Stripped, we’ve discovered tons of delicious ways to enjoy one of our favorite veggies, using our – you guessed it, toaster.

How to:

Using a sharp knife or mandolin, slice the sweet potato into thin even slices. Once you have a few, simply pop into your toaster or toaster oven. (Baking them for 20-30 minutes at 400 degrees in the oven also works, but it’s not necessary.)

Depending on the power of your toaster, it may take a few rounds before the slices are golden brown, crispy – giving you time to prep your toppings.

A softly pan fried or poached egg, with Himalayan salt and pepper.
