I’ve owned a Vitamix blender for some time, using it for smoothies more often than anything. But ice cream? Little did I know (yes, I’m late to the game on this one) just how easy and healthy it can be, and using just a handful of ingredients.

With hats off to Jessica Seinfeld, I’m now eating-up some ‘scream’ with delicious, guilt-free love. And the cherry on top? The kids are loving it too.

INGREDIENTS (2-4 servings):
4 ripe bananas
2 tablespoons peanut butter
2 tablespoons of coconut oil

DIRECTIONS:

Slice the bananas into 1/2-inch thick rounds and put into a resealable plastic bag. Lay them flat in a single layer in the freezer and freeze the bananas for at least an hour or overnight.

Place the frozen bananas, peanut butter, and coconut oil in a food processor or blender, and let it sit 3 or 4 minutes…

Puree until creamy and smooth…

If you like a frozen yogurt consistency, eat it right away. Otherwise, you can store in your freezer for a few hours and enjoy later.

For our next batch, we’re thinking a drizzle of melted peanut butter on top might be delish. Same for a few chunks of dark chocolate. Now if only we had Jessica Seinfeld’s culinary talent for everything else. That’d be a real scream.
